taco tuesday


The other night, I decided it was going to be taco night for dinner {okay, we didn't actually eat these on taco tuesday...} I bought some "beefless ground beef" from the grocery store awhile ago but never seemed to be in the mood or too tired to get everything prepared and ready. But for some reason, this night was the night. So I went to the store to get some fixin's and then came home to prepare it all. I was a little intimidated about the "beef" because I have never had tofu in this form before. And the instructions merely said "just heat and serve" - like it's that easy. But actually, I put it in a skillet with some olive oil and herbs and seasonings and stirred it around for about 6 or 7 minutes and presto, it was done. Then I had the usual, lettuce, corn, cheese, brown rice, and some chips and salsa on hand as well. I also decided to be a little unconventional and get some corn tortillas instead of my usual love for flour ones. I thought that they were all cooked and ready to just warm up, but they in fact were not. Lucky for me, boy was near by and quickly took over and showed me what to do. We put them in another little skillet with oil and cooked them on either side for just a few minutes. They turned out even better than I could have imagined. Everything was so fabulous and incredible I feel like I am eating it all over again right now. I would absolutely recommend making this meal and I can not wait to make it again! I am sure most of you would much prefer the real deal but I have to say.. the "beefless ground beef" really held it's own. Oh and all these fabulous ingredients came from Trader Joes. Every single one of them.

the-15-mile-10-hour-hike-of-a-lifetime

I was having some difficulty trying to figure out how to write this post, because no words I can come up with or picture I have to share will do this trail justice - it was that amazing. Nevertheless I am going to try my best and have decided to turn this post into some what of a "how to" and help anyone else who wants to do this be just as prepared as we were.

The trail we did was called Panorama Trail - don't let the name fool you though, it was a very intense, long trail, climbing up and down a few sets of mountains. Usually you can take a shuttle to the top of Glacier Point and start the trail from there, but I guess Yosemite is not currently providing the service so we hiked up to the top of Glacier Point and then went from there to Panorama Trail which takes you all the way back down to the valley floor.

From start to finish it took us a little over 10 hours, we tried to leave a bit earlier but by the time we parked & even got to the start of the hike it was 9am. The trail up to Glacier Point is called 4 mile trail {also deceiving because it's actually 4.8 miles} which is alternating uphill switchbacks to climb up the mountain. That was pretty hard going and it took us about 3 hours, we made really great time. We stopped once to have a couple snacks to give us energy to finish the uphill to Glacier Point. Once we arrived there we had such a feeling of great accomplishment just looking out at the breathtaking views. There is actually a general store with food and snacks as well as restrooms which we did not know about but were very relieved to find that out. They also had a water fountain so we could fill up our Camel Pack's.
Once we had a nice long break, filled up on food & used the restroom it was time to start Panorama Trail. The first few miles are all downhill and the trail changes as it feels more like a desert with the sun beating down on you. Once you get lower down the mountain there are more trees covering you and it feels more like a forest. Then the first waterfall you see is called Illilouette Falls, it is nice but there are still two more impressive waterfalls coming :)
Before you know it, you are at the bottom between two sets of mountains where there are rapids flowing very aggressively. We could not believe we had come all the way down after being so high up at Glacier Point. Once you cross the river though, the tough part starts again and it is back to uphill climbing. This time it was a little bit tougher because we had already been on the trail for 5 or 6 hours and were getting a bit tired, not to mention it was the middle of the afternoon and the sun was pretty strong. We took this next uphill part pretty slow with a few little breaks every now and then in the shade to catch our breath. There was a great parting between the trees where you can see the back of Half Dome which quickly reminds you just how high you have climbed, again
Not too much further and you come to the top of Nevada Falls, which I think is the biggest waterfall. With all the snow still melting Nevada Falls was in full force with its loud crashing water falling down. It was just breathtaking and you could really feel the energy and power that the water had. We took a little break here and sat on the rocks because out of nowhere this horrible blister on my heel decided it didn't want me to walk anymore. We also had some more snacks to refuel for the hike down via the Mist Trail. This takes you along side Nevada Falls, brings you to the top of Vernal Falls and then really along side Vernal falls with lots of, you guessed it.. mist! The "steps" were very tricky and basically just rocks scattered, you really need to watch every step you take. Going down is actually extremely tricky because you are using different muscles than ones you normally use on a day to day basis and you need to have good solid balance as you climb down. Coming down the Mist Trail was definitely worth every one of those steps because when you are beside Vernal Falls and all you can hear is the roar of the water and the mist on your face, there really is nothing better.
At the bottom of the stairs, I turned back up to look and all I could think was, We did it! We did it! Wow I can't believe we did all that! In a way I was so relieved to be back at the bottom and know there was just about one mile to go of just wide open road and pavement and then I could sit down, relax and take off these clothes. I can tell you this though, I had no idea what I had done all day. I didn't believe that I went all the way up those mountains, and down.. and then back up again. Was I dreaming, did this happen? Brett tried to point out where we were during the day & all I could say was No, no way - we weren't up there, are you crazy?
And just like that, there is my summary and experience with probably the second best hike in the park {I think first being Half Dome} One thing to keep in mind is the valley floor is about 3,000ft in elevation already and when you are at the top of Glacier Point it gets up to about 8,000ft - I believe that is important for anyone to know who wants to go into this. Also here is a list of things we brought with us that I would advise anyone else to do the same. I hope you enjoyed this experience I shared & I would love to hear if you did this hike or anything similar & what your experience was like!

Necessary Items:
  • 2-3 liters of water {seriously!}
  • lots of quality food & snacks
  • energy blocks or liquid goo
  • quality hiking shoes & socks
  • first aid kit {band aids, ibuprofen, gauze - the usual, just in case}
  • sunscreen
  • hand sanitizer
  • bug spray {look for one with deet}
  • mole skin {i actually left this back in our cabin & really regretted it}
  • light weight & comfy clothes
  • a camera!
  • a sense of wonder and adventure

Operation: Closet Overhaul


Operation Closet Overhaul has begun! Let me tell you, I have been talking about doing this for months, and this project has been looming over my head for long enough. These past couple weeks I have been slowly going through everything in my room and closet and really purging through everything. This weekend I finally got it sorted out into designated bags with a destination in mind.
 
I have some clothes that are in great shape that have either been worn once or twice, even some still have the tags on them and just got lost in the depths of my closet. Those clothes I am taking to some local recycled stores and trying to sell them back and earn a little cash. Other clothes I have are still in good shape but I don't think I will be able to sell them back, those are in a different bag that I am going to try to donate to a local shelter for people in need. I also had a couple of old dresses from high school that I wore to Prom or Homecoming - those dresses I know I will not use again. I heard about the Princes Project so I googled it & found the nearest drop off station and turned in my three dresses. Hopefully some girls will find them and look stunning at Prom! :)

I even found a bunch of change lying around everywhere... so I took it to a CoinStar machine and 2 minutes later I had a $35 gift card to Amazon.... oh the possibilities are endless for what I can get!  :)

I read lots of people's blogs and comments, especially from Lauren Conrad's site as she gives advice on continual closet organizing, so thanks everyone for the help to get this started.

Hiking + Beach = Best Sunday Ever

In addition to hiking Castle Rock {see here} the next weekend Brett and I ventured over to Santa Cruz and the UCSC campus because they are also known to have a lot of great hiking trails. We arrived a little later in the afternoon and began hiking. Neither of us have been here before so we just decided on one of the loops and went for it. We hiked for a couple of hours and went through the forest and up to this great lookout point where we could see down miles and miles of the beautiful ocean coast line. As the afternoon went on, the temperature just kept rising and rising. As we made our way back down the trail it was decided that we needed to get beach side. Along with the rest of the entire bay area we headed over to the beach. It was just the perfect day, at 4 o'clock in the afternoon it was still 80 degrees with bright sunshine and hardly any clouds to be seen and it's the beginning of March people! I will let the rest of the pictures speak for themselves, but all in all it was one of the best Sunday's I've had in a long time.

Castle Rock State Park


The past two weekends here in the bay area have been absolutely amazing! Both weekends Brett and I headed out into nature for two completely different hikes - one by the beach and then this one with the pictures above at Castle Rock State Park.

Castle Rock runs through the Santa Cruz Mountains and has a combination of rock formations, beautiful scenery and dense forest. The trails are a little more experienced because one minute you are walking on a large cleared out trail, the next minute the trail disappears and you are climbing over rocks to get back to the trail. You also get to go through some dense forest and completely lose all sounds of civilization until you get to a clearing with a ledge or a huge rock {see last picture} and realize just how high you have climbed along with some amazing views of the forest and even out to the coast. They also have camping grounds which you hike to and miles and miles of trails. We ended up hiking around for about 4 hours, Brett almost had to carry me back to the car because I was so tired at the end! :]

Unfortunately they are planning on closing down the park because of our Governor's current budget cuts to stop funding for the park rangers. I believe that there are a few groups and organizations working to keep the park open and funding for the park rangers to help maintain and watch over the area. Hopefully their efforts pay off and we can all enjoy this amazing park for a lot longer.

Whether you're a local or tourist & even a little "outdoorsy" I would highly recommend this entire area, also known as the Saratoga Gap Trail for anyone to come and take advantage of some of California's beautiful landscape.

be healthy. be strong.


I have been feeling extremely sluggish and have a lack of motivation since we welcomed 2012. Has anyone else been feeling a little like this lately? I have also been having some internal problems with my health and my body just seems less than pleased with anything I try to give it {might have something do with my recent spike in quick fast food meals} but regardless something needs to be done!

wear red day

Today is February 3rd, 2012 also know as National Wear Red Day to help raise awareness for women's heart disease.

More women die of heart disease than all forms of cancer combined. Unfortunately, the killer isn’t as easy to see. Heart disease is often silent, hidden and misunderstood.

This is a particularly special foundation for me and keep it close my heart because I am an Alumna of Alpha Phi International Fraternity where their main philanthropy supports this cause. Every year all across the nation, Alpha Phi chapters hold an annual Red Dress Ball, which became a huge passion of mine. I planned and organized both the 4th and 5th annual ball for the California State University at Northridge.

I encourage you to take this day to learn about the different ways to get involved and learn what you can do and make a difference in someone's life.

climbing up arthur's seat

Arthur's Seat is the main peak of the hills surrounding Holyrood Palace, which is where the Queen stays when she comes to visit Scotland. The highest peak of these hills is over 800 feet and also provides you with beautiful panoramic views of Edinburgh and it's outskirts. It is not all uphill and rocky or grassy however. There are some flat bits around the hills in which many people will walk or run along. There are also two little loch's {lakes} where you can bring a picnic or a book and just enjoy some peace and quiet. The day that we went up it was already pretty windy and when we finally reached the top I seriously thought I was going to blow away. Brett and my cousin were laughing and said they should tie me to a string in case I flew away!

If you are looking for a little peace and quiet outside of Edinburgh, but don't want to travel too far this is a great place to come.It's only about a couple miles away from the castle but you really feel a sense of the outdoors and connect with nature. It is also just a little walk along to see Holyrood Palace and across is the new Scottish Parliament building. Daily visitors are welcome to pay a fee and get a small tour of the Palace, if the Queen is residing there. Every summer she comes up from England to spend some time in Scotland and usually throws a Royal Garden Party, by invitation only of course.

Unfortunately the day that we decided to hike up, it was windy and a bit rainy but it did not stop us! I have included some of my favorites from the hike for you to enjoy.
